I chopped my ass off

no, not that ass, because there's nothing to chop. I spent all day today, off and on, chopping frigging rice! I wanted to make Risotto Milanese, since I made Osso Bucco (they're often eaten together). It seemed endless. When I make rice, I like to make it look bountiful, but my God...I chopped until the cows came home to fill this platter :-/. The other pics are of one more pizza and a bowl of (Italian) pears.

    Can't you just use some of this miniature cheese graters? Just an idea.

  4. Kiva, I don't know how you can do it ! Gorgeous gorgeous works !
    Only one little question : what are the dark bits on the risotto ? we usually don't add anything to it in real scale. It has to be golden , creamy and rich, exactly like yours and I was wondering if your customer asked you a different version. May be truffles ? :oP

  6. Hey Christine!! God, I wish that would work!! It wouldn't give me rice grains, though...the only way is rolling and chopping :-/. The very first time I made rice, many moons ago, I actually rolled each individual grain. Maggots!!

  8. Rosanna, my Italian buddy! You are correct! Bits of truffle!! Mom had it like this in Milan. I'll have to ask her what the name of the restaurant is, but I think it's well known. I don't remember what I had, but I do remember her risotto, because it was the first time I had ever seen it before!!

  11. Oh Kiva now I remember when you made that basmati rice for me and how they spilled and how you made me a fresh batch! It didn't occur to me that making those rice was so hard. You darling darling angel of rice...muah muah muah!

    That pizza has to be one of the best I have seen, Kiv! Makes me want to run out to buy one except its already past 12 midnight.
